Golden syrup dumplings

Delicious sweet dumplings to pair with creamy vanilla ice cream.
Ingredients:
  • 70g (1/3 cup) caster sugar
  • 560ml (2 1/4 cups) water
  • 60g (1/3 cup, lightly packed) brown sugar
  • 80ml (1/3 cup) golden syrup
  • 60ml (1/4 cup) fresh lemon juice
  • 30g butter
  • 190g (1 1/4 cups) self-raising flour
  • 40g butter, extra, chilled, chopped
  • 60ml (1/4 cup) milk
  • 1 egg yolk
  • Double cream, to serve
Instructions:
  • In a large saucepan over low heat, combine water, sugar, golden syrup, lemon juice, and butter. Stir until sugar dissolves and butter melts. Increase heat to medium-high and bring to a boil. Simmer for 5 minutes.
  • In a bowl, combine the flour with extra butter using your fingertips until it resembles fine breadcrumbs. In a separate small bowl, whisk together the milk and egg. Add the milk mixture to the flour mixture and use a knife to mix until it starts to come together. Use your hands to form the dough in the bowl. Divide into 12 equal portions and roll each into a ball.
  • Place the dumplings gently into the luscious golden syrup mixture, ensuring they are fully submerged. Lower the heat to medium-low and let the mixture simmer, covered, for 15-18 minutes until a skewer inserted into the center of the dumplings comes out clean.
  • Portion the dumplings and syrup evenly into individual serving bowls and accompany with a dollop of cream.
