Golden syrup banana bread dumplings

Beloved classic dessert with a delicious banana twist!
Ingredients:
  • 180.00 gm firmly packed brown sugar
  • 221.10 gm golden syrup
  • 80g butter, chopped
  • 500.00 gm water
  • 1 cinnamon stick
  • 199.50 gm self-raising flour
  • 83.75 gm golden syrup, extra
  • 64.38 gm milk
  • 1 medium banana, mashed
  • 2 bananas, extra, sliced diagonally
  • Canola oil cooking spray
  • Vanilla ice-cream, to serve
Instructions:
  • In a large saucepan, combine 3/4 cup brown sugar, golden syrup, water, cinnamon, and half of the butter. Stir over low heat until the sugar dissolves. Let it simmer for 2 minutes.
  • In a bowl, combine flour and butter by rubbing them together with your fingertips. Mix in the golden syrup, milk, and mashed banana.
  • Using a level tablespoon, gently dollop banana mixture into golden syrup. Cover and cook for 20 minutes or until dumplings are fluffy and cooked through.
  • Prepare a large frying pan by spraying it with oil and heating it over medium heat. Sprinkle the sliced banana with the remaining brown sugar and cook for 2 minutes on each side or until golden.
  • Top the dumplings and sauce with caramelized bananas and a scoop of ice cream before serving.
