Delicious carrot scones with a spicy glaze, ready in 35 minutes.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/3 cup firm butter or margarine
  • 1/3 cup milk
  • 1 cup finely shredded carrots (1 1/2 medium)
  • 1/2 cup golden raisins
  • 1 egg
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/8 teaspoon pumpkin pie spice or ground cinnamon
Instructions:
  • Preheat your oven to 400°. In a large bowl, combine flour, sugar, baking powder, pumpkin pie spice, and salt. Use a pastry blender or two knives to cut in the butter until the mixture resembles fine crumbs. Add milk, carrots, raisins, and egg, stirring until the dough comes together and forms a ball.
  • Spoon dough onto ungreased cookie sheet in tablespoons, leaving 2 inches of space between each; gently press down.
  • Bake until light golden brown, then transfer to a wire rack. Drizzle with Spice Glaze and serve warm.
