Spicy oven-baked chicken with slaw

Try these delicious oven-baked golden chicken drumsticks, served with a refreshing apple and radish slaw.
Ingredients:
  • 12 Chicken Drumsticks
  • 375ml buttermilk
  • 225g plain flour
  • 35g sesame seeds
  • 20.00 gm ground paprika
  • 10.00 gm ground cumin
  • 20.00 ml ground coriander
  • 20.00 ml oregano leaves
  • 2 tsp ground fennel
  • 2.40 gm celery salt
  • 1 tsp white pepper, finely ground
  • Olive oil spray
  • 2 Granny Smith apples, cut into matchsticks
  • 1 bunch radish, cut into matchsticks
  • 1 carrot, peeled, cut into matchsticks
  • 1 baby savoy cabbage, finely shredded
  • 1 small fennel, shaved
  • 75g mayonnaise
  • 23.40 gm Dijon mustard
  • 62.50 ml mint, finely shredded
Instructions:
  • Place the chicken in a shallow glass or ceramic dish and generously coat it with buttermilk. Cover with plastic wrap and refrigerate for 2 hours to marinate.
  • 1. Preheat the oven to 200C and line 2 baking trays with baking paper. 2. In a large bowl, mix flour, sesame seeds, paprika, cumin, coriander, oregano, fennel, celery salt, and pepper. 3. Take a piece of chicken from the buttermilk, coat it in the flour mixture, and place it on a lined tray. 4. Repeat the coating process with the remaining chicken pieces and arrange them on the trays.
  • Coat the chicken with oil and bake for 40-45 minutes or until beautifully golden brown and fully cooked, remember to turn the chicken occasionally and swap trays halfway through cooking.
  • In a bowl, mix together apple, radish, carrot, cabbage, fennel, mayonnaise, and mustard. Add mint, toss well to combine, and season to taste.
  • Transfer the chicken to a stylish serving dish and accompany it with the flavorful slaw.
