Easy, cheesy cheddar crisps - quick, crunchy party hit in 30 mins.
Ingredients:
  • 6 ounces sharp cheddar (about 2 cups grated)
  • 1/4 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/8 teaspoon baking powder
  • Pinch of cayenne pepper, to taste (optional)
  • 1 tablespoon unsalted butter, at room temperature
  • 1 tablespoon black sesame, poppy, coriander, or cumin seed
Instructions:
  • Preheat the oven to 350°F and line two baking sheets with parchment paper. Grate the cheese using the large holes of a grater.
  • Prepare the crisp mix: In a bowl, mix flour, paprika, baking powder, and cayenne. Add butter and blend with a fork or your fingers. Stir in the seeds, then add grated cheese and combine with your hands.
  • Shape and bake the crisps: Spoon tablespoon-size portions of the cheese mixture onto the baking sheets, leaving 2 inches between each mound. Gently press down on each portion with the back of a spoon to slightly flatten them. For a neater appearance, consider using a 2-inch round cookie cutter as a mold. Simply place the cutter on the baking sheet, spoon the cheese mix into it, lift the cutter, level the cheese, and repeat until all crisps are formed.
  • Baking Instructions: Bake the crisps for 9 to 12 minutes until golden. Allow them to cool completely on the baking sheets. Lift the parchment paper to remove the crisps from the baking sheet, then peel them off. Store in an airtight container.
