Delicious and fluffy air fryer scones, crispy and golden on the outside. Quick to make, perfect with soup or salad. Get creative with different savory or sweet variations.
Ingredients:
  • 200 g self-raising flour plus extra for dusting
  • 1 teaspoon English mustard powder
  • cayenne pepper
  • 75 g unsalted butter (cold)
  • 120 g mature Cheddar cheese
  • 1 bunch of chives (20g)
  • 70 ml milk plus extra for brushing
  • olive oil
  • 1 x 200 g tub of light cream cheese
  • 1 lemon
  • extra virgin olive oil
  • red wine vinegar
  • 1 teaspoon wholegrain mustard
  • 100 g watercress
  • ½ a bunch of flat-leaf parsley (15g)
  • 1 red chicory
  • 1 eating apple
  • 1 celery heart
  • 50 g shelled unsalted walnut halves
Instructions:
  • In a bowl, sift flour, baking powder, and mustard powder. Add a generous pinch of cayenne pepper and sea salt. Cube butter and rub it into the flour mix until it resembles cornflake-sized pieces. Mix in 100g Cheddar and chopped chives. Make a well in the middle, pour in milk, and gently bring everything together into a soft, dry dough. Shape into a round, cut into wedges, and brush with milk. Top with remaining cheese and a pinch of cayenne pepper. Air-fry scones at 180°C for 12 minutes. For the salad, whisk olive oil, red wine vinegar, mustard, and salt. Toss watercress, parsley, chicory, apple, celery, and walnuts. Mix cream cheese with lemon zest and olive oil. Serve scones with salad and lemony cream cheese on the side.
