Quick-mix cheddar and chive bread

Indulge in the irresistible aroma of freshly baked cheese bread.
Ingredients:
  • 500.00 ml plain flour
  • 20.00 gm caster sugar
  • 8.00 gm baking powder
  • 2.40 gm salt
  • 1/2 tsp ground white pepper
  • 60g butter, chilled, cubed
  • 562.50 ml grated cheddar cheese
  • 62.50 ml finely chopped chives
  • 1 egg
  • 257.50 gm milk
  • Tomato wedges, to serve
  • Rocket, to serve
  • Roast chicken pieces, to serve
Instructions:
  • Preheat your oven to 200°C. Prepare a 6cm deep, 21cm x 10cm loaf pan by greasing and lining it with baking paper.
  • In a food processor, blend together flour, sugar, baking powder, and a pinch of salt and pepper. Add butter and pulse until the mixture looks like fine breadcrumbs. Transfer to a large bowl.
  • Stir in 2 cups of cheese and chives to the flour mixture until fully incorporated. In a separate jug, whisk together the egg and milk with a fork. Add the wet ingredients to the dry ingredients and mix with a flat-bladed knife until a soft dough forms (be careful not to overmix).
  • Press the mixture into the pan and sprinkle the remaining cheese on top. Bake for 35 to 40 minutes until the bread is golden and a skewer comes out clean when inserted into the center. Cool on a wire rack.
  • Enjoy fresh slices of bread alongside ripe, juicy tomatoes.
