Crispy garlic prawns with a flavorful blend of tapioca flour, fish sauce, soy sauce, and white pepper, cooked to perfection with the shell on.
Ingredients:
  • 8 cloves garlic, chopped, or more to taste
  • 2 tablespoons tapioca flour
  • 2 tablespoons fish sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon white sugar
  • 0.5 teaspoon ground white pepper
  • 0.25 cup vegetable oil, divided, or as needed
  • 1 pound whole unpeeled prawns, divided
Instructions:
  • Mix together the garlic, tapioca flour, fish sauce, soy sauce, sugar, and white pepper in a bowl. Add the prawns and toss until evenly coated.
  • In a heavy skillet over high heat, heat 2 tablespoons of oil until shimmering. Cook prawns in batches in a single layer until golden brown and crispy, about 1 to 2 minutes per side. Repeat with the remaining prawns and oil.
