French-Canadian pork spread infused with nutmeg and clove, perfect for rustic bread.
Ingredients:
  • 2 pounds finely ground pork fat
  • 2 pounds finely ground pork
  • 2 onions, finely chopped
  • 4 cups water
  • 1 teaspoon ground cloves
  • 0.75 teaspoon ground nutmeg
  • salt and black pepper to taste
Instructions:
  • In a large pot, mix pork fat, ground pork, onions, water, cloves, and nutmeg. Season with salt and pepper. Bring to a boil over medium-high heat, then simmer uncovered on medium-low heat until pork is tender, at least 1 1/2 hours. Mash the mixture with a potato masher every 15 minutes while cooking.
  • Simmer the gorton until rich in flavor, adding water as needed. Reduce the liquid without burning. Chill the gorton overnight, skim off fat, or mix for a creamy texture.
