French-Canadian favorite: Tender braised pork with onion, cinnamon, and clove.
Ingredients:
  • 1 pound lean pork butt, cut into pieces
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • salt and black pepper to taste
Instructions:
  • In a saucepan, combine pork, onion, cinnamon, and clove. Season with salt and pepper. Add just enough water to cover the pork. Bring to a boil.
  • Lower the heat to medium-low and simmer gently until most of the water has cooked off, approximately 1 hour. Stir occasionally to ensure the pork is cooked uniformly.
  • Shred pork into thin strands using a potato masher or wire whisk. Discard any excess liquid and transfer meat to a serving bowl. Chill in the refrigerator until cold before serving.
