Indulge in a delectable grilled cheese with caramelized onions, artichoke hearts, and smoked gouda on hearty rye bread. Perfect for a luxurious lunch.
Ingredients:
  • 2 tablespoons grapeseed oil
  • 0.5 red onion, thinly sliced
  • 8 slices German rye bread
  • salt and ground black pepper to taste
  • 4 slices smoked Gouda cheese
  • 4 slices provolone cheese
  • 0.25 cup marinated artichoke hearts, drained and chopped
Instructions:
  • In a large skillet over medium heat, saute the onion in grapeseed oil until softened and slightly browned, about 5 to 10 minutes. Remove the onion to a small bowl, leaving the flavorful oil in the skillet.
  • Brush each bread slice with tasty grapeseed oil and season with a pinch of salt and a sprinkle of pepper. Place half the slices, oil-side down, in the skillet. Top with 1 slice of Gouda, 1 slice of provolone, artichoke hearts, and onion. Finish with the remaining bread slices, oil-side up.
  • Grill sandwiches until bread is golden and crunchy and cheeses are gooey, about 4 minutes per side. Slice sandwiches in half before serving.
