Smoked Salmon and Gruyere Grilled Cheese Sandwich

Grilled Gruyere and Swiss cheese sandwich with smoked salmon and Meyer lemon - a gourmet twist on a classic!
Ingredients:
  • 1/2 Meyer lemon, thinly sliced, seeds removed
  • 8 slices French bread
  • 4 ounces smoked salmon
  • 4 ounces Gruyere cheese, sliced or shredded
  • 1 Tbsp chopped chives
  • Butter
Instructions:
  • Prepare lemon-infused syrup: In a small saucepan, bring 1 cup of water to a boil and stir in 1/2 teaspoon of salt until dissolved. Layer lemon slices in the pan and allow water to reduce into a thin syrup without stirring. Remove from heat when the syrup forms.
  • Preheat a large cast iron pan over medium-high heat while you prepare the sandwiches.
  • Create delicious sandwiches by assembling the ingredients in this order: Place 4 slices of bread down. Add smoked salmon, cheese, chives, and a cooked lemon slice on each. Complete with another layer of bread on top.
  • Spread a generous amount of butter on the top bread slices. Place the sandwiches in the hot pan with the buttered side facing down. Adjust heat to medium and cook until sandwiches are toasted on the bottom.
  • Spread butter on the top side of the sandwiches in the pan. Use a metal spatula to flip them over and press down gently. Cook until the bottom is golden brown. If the cheese isn't melted, reduce the heat, cover, and cook for a few more minutes.
