Savory Italian mushroom risotto: A labor of love that pairs perfectly with grilled meats and chicken.
Ingredients:
  • 6 cups chicken broth, or as needed
  • 3 tablespoons olive oil, divided
  • 1 pound portobello mushrooms, thinly sliced
  • 1 pound white mushrooms, thinly sliced
  • 2 medium shallots, diced
  • 1.5 cups Arborio rice
  • 0.5 cup dry white wine
  • 4 tablespoons butter
  • 3 tablespoons finely chopped chives
  • 0.33333334326744 cup freshly grated Parmesan cheese
  • sea salt and freshly ground black pepper to taste
Instructions:
  • Prepare all necessary ingredients.
  • Gently heat broth in a saucepan on low.
  • Heat 2 tablespoons of olive oil in a large saucepan over medium-high heat. Sauté portobello and white mushrooms until soft, about 3 minutes. Transfer mushrooms and their liquid to a bowl and set aside.
  • Pour the last tablespoon of olive oil into the saucepan. Add shallots and sauté for 1 minute. Add the rice and cook until it is well coated with oil and turns a pale, golden color, for about 2 minutes.
  • Stir in the wine until fully absorbed, then add 1/2 cup of warm broth to the rice, stirring until absorbed.
  • Gradually incorporate 1/2 cup of broth at a time while stirring continuously until the rice is al dente and has absorbed the liquid, for approximately 15 to 20 minutes.
  • Take the pan off the heat and gently mix in the saved mushrooms and their flavorful liquid, rich butter, fresh chives, and savory Parmesan cheese.
  • Season generously with salt and pepper, then serve right away.
