Make tangy Turkish silverbeet and feta parcels grilled to perfection, enjoy hot with a burst of lemon.
Ingredients:
  • 600g (4 cups) plain flour
  • 2.40 gm salt
  • 410ml (1 2/3 cups) warm water
  • 125ml (1/2 cup) olive oil
  • 250g feta, finely grated
  • 100g fresh ricotta, crumbled
  • 4 shallots, trimmed, finely chopped
  • 1500.00 ml (1 bunch) finely shredded silverbeet leaves
Instructions:
  • In a bowl, gently sift together the flour and salt. Create a crater in the middle. Pour in water and 2 tablespoons of oil. Combine until dough forms. Transfer to a lightly floured surface and knead for 10 minutes until smooth and stretchy. Cover and let rest overnight.
  • Take the dough and split it into 6 parts. Roll out one portion on a lightly floured surface into a 45 x 20cm rectangle.
  • Mix together feta, ricotta, shallot, and silverbeet in a bowl. Spread one-sixth of the feta mixture on half of the dough, keeping a 3cm border. Fold the dough in half to cover the filling, then press the edges with a rolling pin to seal. Repeat with the rest of the dough and feta mixture.
  • Preheat a barbecue flat plate over medium-low heat. Drizzle a bit of oil onto the plate. Cook 2-3 gözleme for 5 minutes on each side until they turn golden. Repeat with the remaining gözleme, adding more oil in 2 separate batches. Cut the gözleme into slices before serving.
