Easy flourless peanut butter cookies - naturally gluten-free and made with pantry staples. Top with sea salt for a sweet and salty twist. Pair with ice cream or milk for a delicious treat.
Ingredients:
  • 1 cup creamy peanut butter
  • 3/4 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1/2 cup gluten-free dry-roasted peanuts, finely chopped
  • 1 teaspoon coarse sea salt
Instructions:
  • Preheat the oven to 350°F. Combine peanut butter, brown sugar, baking soda, vanilla, and egg in a large bowl until thoroughly mixed. Gently fold in peanuts. Form mixture into 1 1/4-inch balls and space them about 1 inch apart on ungreased cookie sheets. Use a fork to create a crisscross pattern on top of each cookie and generously sprinkle salt on top before baking.
  • Bake until golden around edges, about 9 to 11 minutes. Let cool for 2 minutes, then transfer to a cooling rack.
