Grain-free broccoli fritters, quick and simple to prepare.
Ingredients:
  • 1 teaspoon Dijon mustard
  • 0.25 cup shredded Parmesan cheese
  • 1 tablespoon minced fresh chives, plus more for garnish
  • 1 clove garlic, minced
  • 1 teaspoon salt, or to taste
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 2 cups chopped cooked broccoli
  • 0.5 cup shredded carrots
  • 2 tablespoons olive oil
Instructions:
  • In a bowl, whisk together eggs and mustard until smooth. Add Parmesan cheese, chives, garlic, salt, and pepper; mix well.
  • Combine the chopped broccoli and shredded carrots, ensuring they are thoroughly mixed.
  • In a large skillet, heat up some olive oil over medium heat.
  • Form the vegetable mixture into 8 equal patties measuring 3 inches each. Place them in the hot oil in the skillet and cook until golden brown, about 3 to 4 minutes. Then, lower the heat to medium-low, flip the broccoli patties, and continue cooking until both sides are golden brown, for another 3 to 4 minutes.
  • Transfer the patties onto a warm serving platter and enhance with more fresh chives, if preferred. Serve promptly.
