Tangy-sweet ham loaf, a delicious Western Pennsylvania dish using leftover smoked ham.
Ingredients:
  • 2 pounds ground smoked ham
  • 2 pounds ground pork
  • 2 cups crushed graham crackers
  • 1.5 cups evaporated milk
  • 3 eggs, beaten
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 cup brown sugar
  • 0.5 cup white vinegar
  • 0.5 cup water
  • 1 tablespoon ground dry mustard
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and spread out a large baking sheet or jellyroll pan with a sheet of parchment paper.
  • Combine the smoked ham and ground pork in a large bowl until well mixed. Gently fold in the graham crackers, evaporated milk, and eggs. Shape the mixture into two loaves and place them on the baking sheet.
  • Combine tomato soup, brown sugar, vinegar, water, and dry mustard in a saucepan over medium-low heat. Stir until fully combined and bring to a boil, ensuring the brown sugar dissolves. Drizzle 1 cup of the sauce over each ham loaf, saving the rest for later.
  • Simply bake in the oven for 2 hours, then slice and serve with the reserved sauce.
