Grandma's comforting corned beef and cabbage soup - a hearty twist on a timeless favorite.
Ingredients:
  • 1 tablespoon oil
  • 6 large potatoes, peeled and cubed
  • 1 small head cabbage, chopped
  • salt to taste
  • 6 cups water, or as needed
  • 1 (32 ounce) can diced tomatoes
  • 2 (12 ounce) cans corned beef
  • 1 (15 ounce) can cream-style corn
  • 1 (15 ounce) can whole kernel corn, drained
  • ground black pepper to taste
Instructions:
  • In a large pot over medium heat, sauté onions in oil until softened and translucent, about 5 minutes.
  • Combine potatoes, cabbage, salt, and pepper in a pot and cover with water. Bring to a boil, then simmer until potatoes are tender, around 20 minutes.
  • Combine diced tomatoes, corned beef, cream-style and kernel corn, and pepper in a pot. Simmer for 15 minutes or until heated through.
