Grandma's Chicken Soup with Homemade Noodles

Homemade noodles shine in this comforting chicken soup, reminiscent of grandma's classic recipe.
Ingredients:
  • 1 gallon chicken stock
  • 4 bone-in chicken breast halves
  • 3 cups all-purpose flour
  • 2 tablespoons water, or as needed
Instructions:
  • Bring chicken stock to a boil. Simmer chicken breasts until cooked through, about 15 to 20 minutes. Remove, cool, and shred chicken meat; keep stock simmering.
  • Combine flour and a pinch of salt in the stand mixer bowl fitted with the dough hook attachment on low speed. Gradually add eggs and water, one tablespoon at a time, until dough forms a cohesive ball.
  • Divide the dough in half. Roll out one half on a lightly floured surface until it is 1/8-inch thick. Use a sharp knife or a fettuccine pasta cutter to cut the dough into noodles that are 2 to 3 inches long and 1/4 inch wide. Repeat with the other half of the dough.
  • Add the chicken back to the flavorful stock and gently introduce the noodles. Season the soup with a touch of black pepper and a pinch of salt. Let it simmer until the noodles are perfectly cooked, approximately 15 to 25 minutes.
