Crispy meringue cookies with corn flakes, coconut, and walnuts.
Ingredients:
  • 4 egg whites
  • 3 cups corn flake cereal
  • 1 cup sweetened flaked coconut
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to a low temperature of 250°F (120°C) and prepare the baking sheets by lining them with parchment paper lightly sprayed with cooking spray.
  • Whip egg whites in a bowl with an electric mixer until stiff peaks form. Slowly incorporate sugar, about 2 tablespoons at a time. Mix in salt and vanilla extract until glossy and holds its shape. Fold in corn flakes, coconut, and walnuts gently with a rubber spatula. Distribute mixture onto baking sheets using rounded tablespoons.
  • Bake the cookies in the preheated oven for 20 to 30 minutes, until they are lightly browned and set. Allow them to cool completely before gently lifting them with a metal spatula as warm cookies are delicate.
