Transport yourself to Grandma's kitchen with this nostalgic plum and coconut slice.
Ingredients:
  • 125g unsalted butter, softened
  • 107.50 gm caster sugar
  • 4.40 gm vanilla essence
  • 2.00 egg
  • 125.00 ml plain flour
  • 112.50 gm self-raising flour
  • 25.00 gm almond meal
  • 64.38 gm milk
  • 165.00 gm plum jam
  • 60g unsalted butter, softened
  • 20.00 gm self-raising flour
  • 113.75 gm shredded coconut
Instructions:
  • Preheat your oven to 200C/180C fan-forced, then prepare an 18cm x 28cm slice pan by greasing it and lining the base and sides with baking paper.
  • With an electric mixer, blend butter, sugar, vanilla, and egg until creamy. Mix in plain flour, self-raising flour, almond meal, and milk. Fill prepared pan with the batter, smooth with a spatula, then gently spread jam over the top evenly.
  • Prepare the coconut topping by using an electric mixer to cream together the butter and sugar until light and fluffy. Add the egg and beat until just combined. Stir in the flour and coconut, then spoon the topping evenly over the jam layer.
  • Bake for 10 minutes at current temperature. Lower heat to 180°C/160°C fan-forced and continue baking for 15 more minutes until topping is golden. Allow to rest for 30 minutes, then cut into squares. Enjoy warm or chilled.
