Plum and pear skillet crumble

Indulge in a glowing plum and pear skillet crumble, topped with warm creamy vanilla ice-cream for a delectable post-dinner treat.
Ingredients:
  • 3 ripe pears, peeled, cored, cut into thin wedges
  • 55g caster sugar
  • 6 just-ripe plums, pitted, cut into wedges
  • 150g plain flour
  • 90g rolled oats
  • 110g brown sugar
  • 100g butter, softened
  • 25g coconut
  • 20g almond
  • 2.50 gm ground cinnamon
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat the oven to 180C. Heat a large ovenproof frying pan (22cm base measurement) over medium heat. Add pear slices and sprinkle with caster sugar, then add 1 tablespoon of water. Cook for 5 minutes or until slightly tender, turning occasionally. Arrange plums over the pears and cook for another 5 minutes, gently turning occasionally, until plums begin to collapse. Remove from heat.
  • In a large bowl, mix together the flour, oats, and brown sugar. Use your fingertips to rub the butter into the mixture until it resembles coarse breadcrumbs. Add the coconut, almonds, and cinnamon, then toss everything together. Sprinkle the mixture evenly over the plums.
  • Bake until beautifully golden and warm. Allow to cool for 5 mins then enjoy with a scoop of vanilla ice-cream.
