Recipe for two 9-inch pies with luscious coconut buttermilk custard.
Ingredients:
  • 5 eggs
  • 2 cups white sugar
  • 0.75 cup buttermilk
  • 0.5 cup melted butter
  • 1 (10 ounce) package flaked coconut
  • 1 teaspoon vanilla extract
  • 2 (9 inch) unbaked pie crusts
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a large bowl, whisk together eggs and sugar until perfectly smooth. Gently mix in buttermilk and melted butter. Fold in coconut and vanilla, then pour the luscious filling into 2 - 9 inch pie shells.
  • Place in your oven that has been preheated to the designated temperature for a delicious 45-50 minutes, or until beautifully golden brown.
