Delicious gingerbread pancakes with flavorful ingredients like ginger, vanilla, and molasses.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon ground dried ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon vanilla extract
  • 0.25 cup molasses
  • 1.5 cups water
Instructions:
  • Combine flour, baking powder, baking soda, salt, ginger, and cinnamon in a bowl; set aside. In a separate bowl, whisk together egg, vanilla, and molasses until smooth. Stir in water until fully incorporated. Gently mix in the flour mixture until just combined, allowing for a few lumps.
  • Preheat a lightly oiled griddle over medium-high heat. Spoon large portions of the batter onto the griddle and cook until bubbles appear and the edges are dry. Flip and cook until golden brown. Repeat the process with the rest of the batter.
