Grandma's Graham Cracker Pudding

Indulgent pudding in a buttery graham cracker crust, topped with a crunchy crumbly topping.
Ingredients:
  • 0.5 cup butter, melted
  • 0.5 cup brown sugar
  • 24 graham crackers, crushed
  • 1 quart milk
  • 1 pinch salt
  • 3 egg yolks, beaten
  • 1 tablespoon vanilla
  • 1 cup white sugar
  • 0.25 cup cornstarch
  • 3 egg whites
  • 1 teaspoon confectioners' sugar
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C).
  • Combine butter, brown sugar, and 2/3 of the crushed graham crackers in a medium bowl. Gently press this mixture into the bottom of a 9x13 inch baking dish.
  • Combine milk, salt, egg yolks, vanilla, white sugar, and cornstarch in a saucepan over medium heat. Cook while stirring until thickened, approximately 12 minutes. Transfer to a baking dish.
  • Whip egg whites in a medium bowl till soft peaks form, then fold in confectioners' sugar. Spread over the ingredients in the baking dish and sprinkle with the rest of the crushed graham crackers.
  • Bake in the preheated oven for 15 minutes until lightly golden.
