Traditional homemade pizza with flavorful Italian sausage, pepperoni, crushed red pepper, and hot sauce. A family favorite worth starting at home.
Ingredients:
  • 2 (.25 ounce) packages fast-rising dry yeast
  • 1 teaspoon white sugar
  • 2.5 cups warm water (110 degrees F/45 degrees C), divided
  • 0.33333334326744 cup olive oil
  • 1 tablespoon salt
  • 1 pinch garlic powder, or to taste
  • 5 cups all-purpose flour, or more if needed
  • 2 tablespoons butter, melted
  • 1 tablespoon dried oregano, or to taste
  • 2 tablespoons ricotta cheese
  • 1 (29 ounce) can tomato puree (such as Contadina® Tomato Puree)
  • 1 teaspoon onion powder, or to taste
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste
  • 1 teaspoon white sugar, or to taste
  • 1.5 teaspoons olive oil, divided
  • 3 Italian sausage links, casings removed
  • 1 pinch dried oregano, or to taste
  • 1 pinch crushed red pepper flakes, or to taste
  • 1.5 teaspoons melted butter, divided
  • 1 cup shredded pizza cheese blend, or as needed
  • 24 slices pepperoni sausage, or as needed
  • 0.75 teaspoon crushed red pepper flakes, or as needed
  • 3 dashes Louisiana-style hot sauce, or to taste
Instructions:
  • Combine the yeast, 1 teaspoon sugar, and 1/2 cup warm water in a large bowl. Allow the mixture to sit until the yeast develops bubbles and a creamy foam layer on top, approximately 15 minutes. Add 2 more cups of warm water, olive oil, 1 tablespoon salt, garlic powder, and roughly 2 cups of flour. Stir until a loose batter forms, then gradually mix in flour, about 1/2 cup at a time, until the dough is slightly sticky but not wet, around 3 more cups in total.
  • Transfer the dough to a floured surface and knead until smooth and elastic for about 10 minutes. Shape the dough into a ball, place it in an oiled bowl, cover with a cloth, and let it rise in a warm place until doubled in size, approximately 30 minutes.
  • In a saucepan over medium-low heat, melt 2 tablespoons of butter. Stir in oregano and let it fry in the butter briefly. Whisk in ricotta cheese until smooth. Add tomato puree, onion powder, a pinch of garlic powder, 1 teaspoon salt, black pepper, and 1 teaspoon sugar. Stir until smooth. Bring the sauce to a boil, stirring occasionally. Cover and remove from heat.
  • Preheat your oven to 375 degrees F (190 degrees C) and generously coat each of the 3 12-inch pizza pans with 1/2 teaspoon of olive oil.
  • In a skillet over medium heat, cook the sausage with a pinch of dried oregano and a pinch of crushed red pepper flakes, if desired. Break the sausage into small chunks as it browns, about 10 minutes, until no longer pink. Remove from heat and set aside.
  • Transfer the dough to a floured surface, deflate it by punching it down, and divide it into 3 equal portions. Roll out a dough portion to fit a pizza pan, then transfer it to the pan. Gently stretch the dough slightly beyond the edges, fold over the excess to create a thicker crust, and press to seal. Repeat with the remaining dough portions.
  • After baking the crusts for 15 minutes in the preheated oven, take them out and delicately brush each one with 1/2 teaspoon of melted butter according to the Notes section.
  • Spread sauce on each crust using a large spoon. Top with pizza cheese blend, evenly scatter browned sausage pieces, place pepperoni slices, sprinkle each pizza with about 1/4 teaspoon of crushed red pepper, shake hot sauce over each pizza. Bake for 15-20 more minutes until cheese is bubbly and beginning to brown.
