Grandma's Oatmeal Cookies

Legendary oatmeal cookies, inspired by Grandma. Optional walnuts and raisins. A taste of nostalgia in every bite.
Ingredients:
  • 1 cup shortening
  • 2 large eggs, well beaten
  • 1 tablespoon vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 3 cups old-fashioned rolled oats (we use Quaker Quick or Old Fashioned. Do NOT use instant.)
  • 3/4 cup chopped walnuts (use 1/2 cup if using raisins)
  • 1 cup raisins (optional)
Instructions:
  • Preheat your oven to 350°F.
  • Prepare the cookie dough by creaming together shortening, brown sugar, and white sugar until smooth. Mix in eggs and vanilla extract until well combined. In a separate bowl, combine flour, salt, baking soda, and cinnamon, then incorporate into the sugar-egg mixture and mix thoroughly. Stir in a tablespoon of water, followed by raisins (if desired) and nuts. Finish by adding oats.
  • Spoon heaping tablespoonfuls of dough onto greased cookie sheets. Bake at 350°F for 10 minutes, then transfer to a wire rack.
  • Allow the cookies to cool completely before storing them in an airtight container at room temperature for several days.
