The Best Oatmeal Raisin Cookies

Buttery oatmeal raisin cookies, reminiscent of Grandma's recipe, featuring old-fashioned oats, brown sugar, and plump raisins.
Ingredients:
  • 1 cup (2 sticks) unsalted butter, softened, OR 1 cup shortening
  • 1 cup brown sugar (light or dark), packed
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1 1/2 cups raisins
  • 1/2 cup chopped walnuts (optional)
  • 3 cups rolled oats (We use Quaker Old Fashioned or Quick. Do NOT use instant.)
Instructions:
  • Preheat your oven to 350°F and prepare 2 large cookie sheets by greasing them or lining them with Silpat or parchment paper.
  • In a large mixing bowl, cream the butter until smooth. Mix in the brown sugar and white sugar until fluffy, about 3 minutes. Incorporate the eggs one at a time, then stir in the vanilla extract.
  • Combine the flour, salt, baking soda, cinnamon, and nutmeg in a medium bowl. Incorporate this mixture into the butter-sugar mixture. Next, fold in the raisins, nuts, and oats.
  • Drop large spoonfuls of dough onto the baking sheets, making sure to leave 2 inches of space between each cookie.
  • Bake the cookies at 350°F until the edges turn golden brown, about 10 to 12 minutes. If using 2 cookie sheets, switch their positions halfway through baking. The cookies may appear underdone and lightly colored except for the edges, which is normal - they will set as they cool. Bake the rest of the cookie dough in the same way.
  • Let cookies cool on the cookie sheets for 1 minute. Using a metal spatula, transfer them to a wire rack to cool completely until firm. Store in an airtight container at room temperature for up to 5 days. If you enjoyed the recipe, please rate and comment below!
