Delicious oatmeal raisin cookie pancakes combine the best of both worlds in one hearty dish.
Ingredients:
  • 1.5 cups old-fashioned rolled oats
  • 1.5 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1.5 cups buttermilk
  • 0.33333334326744 cup white sugar
  • 0.5 cup raisins
  • 3 tablespoons chopped walnuts
  • 1 teaspoon vegetable oil, or as needed
Instructions:
  • Blend oats in a food processor until finely ground, then combine with flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
  • Combine buttermilk, milk, sugar, 1/4 cup vegetable oil, and egg in a separate bowl, whisk until smooth. Mix into oat mixture until well combined with about 30 strokes. Gently fold in raisins and walnuts.
  • Oil a skillet or griddle over medium heat. Spoon batter onto the griddle, cooking until bubbles form and edges are dry, around 3 to 4 minutes. Flip and cook until browned, about 2 to 4 minutes. Repeat with the remaining batter.
