Delicious oatmeal raisin cookie made with a sugar substitute, perfect for dietary restrictions.
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 0.5 cup low fat margarine
  • 0.5 cup packed brown sugar
  • 5 (1 gram) packets Acesulfame Potassium sweetener
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1.25 cups rolled oats
  • 0.5 cup chopped raisins
Instructions:
  • First, preheat your oven to a toasty 375 degrees F (190 degrees C) to create the perfect baking environment. Then, generously grease your cookie sheets to ensure your cookies slide right off after baking.
  • Combine the flour, baking powder, cinnamon, ginger, and salt in one bowl. In another bowl, mix margarine, brown sugar, and sugar substitute until creamy. Add egg and vanilla, then blend in the sifted dry ingredients. Stir in oats and raisins until well incorporated.
  • Scoop cookie dough onto lined baking sheets using a rounded teaspoon. Bake in a preheated oven for 8-10 minutes. Let cookies cool on the sheets before serving.
