Savory Southern-style onion rings - a party hit!
Ingredients:
  • 1 quart oil for frying, or as needed
  • 2 cups all-purpose flour
  • 2 teaspoons salt, divided
  • 2 teaspoons ground black pepper, divided
  • 3 egg whites
  • 1 cup milk
  • 1 tablespoon white vinegar
  • 3 large sweet onions, peeled and sliced into thick rings
Instructions:
  • Warm the oil in a large heavy skillet over medium-high heat, or use a deep-fryer set to 375 degrees F (190 degrees C).
  • Spread the flour in a shallow baking pan and mix in 1 teaspoon each of salt and pepper. In a medium bowl, vigorously whisk together egg whites, milk, vinegar, and the remaining salt and pepper until frothy.
  • Coat onion rings in wet ingredients, coat with flour mixture, dip in egg white, and coat with flour again for a crispy finish.
  • Fry onion rings in small batches in hot oil until golden brown, ensuring they are not crowded. Drain on paper towels and serve promptly.
