Easy pear preserves with warm nutmeg and spicy allspice, perfect for pear lovers to savor anytime.
Ingredients:
  • 6 cups peeled, cored, and sliced pears
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 (2 ounce) package powdered fruit pectin
  • 8 cups white sugar
  • 0.5 cup brown sugar
  • 2 teaspoons ground allspice
  • 2 teaspoons ground nutmeg
Instructions:
  • Check six 8-ounce jars for cracks and rust on rings, discard any damaged ones. Submerge jars in simmering water for 10 minutes. Clean new lids and rings with warm, soapy water.
  • In a large saucepan, mix pears, water, and lemon juice. Cover and simmer for 10 minutes. Add pectin and bring to a full boil. Mix in white sugar and stir until dissolved, around 1 minute. Take off the heat and stir in brown sugar, allspice, and nutmeg.
  • Spoon pear preserves into sterilized jars, leaving a 1/2 inch space at the top. Glide a knife around the jars to get rid of air bubbles. Clean the rims with a damp paper towel. Seal with lids and screw tightly.
  • Fill a large stockpot halfway with water and bring it to a boil. Using a holder, carefully lower the jars 2 inches apart into the boiling water. Pour in additional boiling water to cover the jars by at least 1 inch. Bring it to a rolling boil, cover, and process for 10 minutes.
  • After removing the jars from the stockpot, allow them to cool for 12 to 24 hours, ensuring they are spaced apart. Press the center of each lid gently to check for proper sealing. Once cooled, remove the rings, and store the jars in a cool, dark place until ready to use.
