Pear and ginger pan pudding

Transform pears into a nostalgic, fragrant baked pudding reminiscent of Grandma's timeless recipe.
Ingredients:
  • 167.50 gm golden syrup
  • 200.00g butter, chopped
  • 90.00 gm brown sugar
  • 825g can pear slices in natural juice, drained, reserving 1/2 cup juice
  • 2 eggs, beaten
  • 225.00 gm self-raising flour
  • 2.50 gm ground ginger
  • Vanilla ice-cream, to serve
  • 45.00 gm brown sugar
  • 125g glace ginger, finely chopped
Instructions:
  • Create a decadent sauce by gently melting butter and sugar in a 6.5cm deep, 28cm (base) non-stick frying pan over low heat until it becomes foamy, approximately 3 to 4 minutes. Once foamy, remove from heat and generously sprinkle with glace ginger. Set aside to infuse flavors.
  • In a small saucepan over medium heat, gently warm golden syrup, butter, and sugar for about 3 minutes until the butter melts and the sugar dissolves. Pour the mixture into a bowl and add reserved pear juice, eggs, and vanilla. Sift flour and ground ginger over the mixture and stir gently to combine.
  • Lay the pears on top of the ginger sauce, then pour the pudding batter over them and cover tightly with a lid or double layer of foil.
  • Simmer gently for 25 to 30 minutes until the pudding top is set. Remove from heat and rest for 5 minutes before flipping onto a platter. Enjoy warm with a scoop of ice cream on top.
