Delicious weekend waffles topped with pears and ginger.
Ingredients:
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 tablespoon finely chopped crystallized ginger
  • 2 teaspoons cornstarch
  • 2 teaspoons butter or margarine
  • 1 1/2 teaspoons lemon juice
  • 2 medium pears, peeled, sliced (about 1 2/3 cups)
  • 1/2 cup raspberries
  • 2 cups Original Bisquick™ mix
  • 1 1/3 cups milk
  • 2 tablespoons vegetable oil
Instructions:
  • In a small saucepan, simmer topping ingredients (excluding pears and raspberries) over medium heat until thick and bubbling. Let it boil for 1 minute. Add pears and heat through, then gently fold in raspberries. Keep the mixture warm until ready to serve.
  • Preheat waffle maker. Grease if needed. Combine waffle ingredients in a bowl using a whisk until well mixed.
  • Pour batter onto the center of the hot waffle maker for each waffle. Follow manufacturer's instructions for batter quantity. Close the lid of the waffle maker.
  • Bake until steaming stops, then carefully remove waffle. Repeat with remaining batter and serve waffles with topping.
