Pear and ginger cake with nutty streusel topping.
Ingredients:
  • 1/3 cup Gold Medal™ all-purpose flour
  • 1/3 cup chopped pecans
  • 2 tablespoons packed brown sugar
  • 2 tablespoons butter, melted
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 2/3 cup vegetable oil
  • 1/3 cup buttermilk
  • 2 eggs
  • 1 1/2 cups diced peeled pears (about 2 medium)
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pan). Coat the bottom of an 8- or 9-inch square pan with cooking spray. Combine all streusel ingredients in a small bowl and set aside.
  • In a large bowl, combine 1 3/4 cups flour, granulated sugar, 1/2 cup brown sugar, baking soda, ginger, and salt using a spoon. Mix in oil, buttermilk, and eggs until well blended. Gently fold in the pears. Transfer the batter to a pan and sprinkle with streusel topping.
  • Bake for 45 to 55 minutes until deep golden brown and set on top, then cool for 15 minutes. Serve either warm or cool.
