Pear and Ginger Muffins

Delicious pear and ginger muffins made with Bisquick Heart Smart® mix.
Ingredients:
  • 2 cups Bisquick Heart Smart® mix
  • 2/3 cup milk
  • 1 egg
  • 1/3 cup packed brown sugar
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon grated gingerroot
  • 1 cup chopped unpeeled pear
Instructions:
  • Preheat oven to 400°F and line a standard muffin tin with 12 paper baking cups.
  • Combine all ingredients in a medium bowl, excluding the pear. Gently fold in the pear. Distribute the batter evenly into the muffin cups.
  • Bake until beautifully golden, for about 17 to 20 minutes. Transfer to a wire rack right away. Enjoy warm, if preferred.
