Quick and easy fall dish: Pan-seared pork chops with sweet & tangy pear-ginger sauce, all in one pot.
Ingredients:
  • 4 pork chops
  • Salt
  • 2 tablespoons canola or other vegetable oil
  • 2 tablespoons unsalted butter
  • 1/3 cup shallots, minced
  • 2 tablespoons ginger , minced
  • 1 large pear (anjou, bartlett, or bosc), peeled and diced
  • 1 1/2 cups chicken stock
  • 3 tablespoons cider vinegar
  • 2 tablespoons honey
  • 1/4 to 1/2 teaspoon fresh rosemary, minced
  • Freshly ground black pepper
Instructions:
  • Season the pork chops generously with salt and allow them to come to room temperature while you prepare the vegetables and pear. Score the fat on the pork chops by making shallow cuts through the outer layer to the meat. Heat oil in a large frying pan over medium-high heat until shimmering.
  • Sear the pork chops in batches in hot oil until nicely browned on each side, about 3-5 minutes per side depending on heat level.
  • Continue cooking the pork chops over lowered heat until they reach an internal temperature of 145°F, which should take 5 to 15 minutes depending on thickness. Let them rest on a plate once done.
  • In a pan, keep 1 tablespoon of the pork oil. Add butter, shallots, and ginger. Sauté for 1 minute. Add pear and cook for another minute once pork is done.
  • Bring the magic: In a saucepan, combine chicken stock, vinegar, and honey and bring to a rolling boil. Boil vigorously until the liquid reduces by 2/3, approximately 4-6 minutes. Turn off the heat, then infuse with fresh rosemary and a sprinkle of black pepper. Season with salt to taste. Serve the pork chops with the delightful sauce on the side.
