Classic pork and apple pairing for a delicious dish.
Ingredients:
  • 400g jasmine rice
  • 150g snow peas, trimmed, sliced lengthways
  • 62.50 ml coriander leaves
  • 1 long red chilli, sliced
  • 18.20 gm olive oil
  • 4 x 220g Pork Forequarter Cutlets
  • 185ml apple juice
  • 20.00 ml finely grated fresh ginger
  • 21.00 gm soy sauce
  • 1 chicken stock cube, crumbled
  • Coriander sprigs, to serve
  • Sliced chilli (optional), to serve
Instructions:
  • Prepare the rice according to the package instructions. Add snow peas and fresh coriander leaves, then cover and let sit for 5 minutes.
  • Heat oil in a large frying pan over high heat and sear pork for 3 minutes on each side until just cooked through. Transfer pork to a plate and cover to keep warm.
  • Combine apple juice, fresh ginger, soy sauce, and a stock cube in the frying pan. Stir and cook for 5 minutes until the glaze thickens.
  • Place the pork in a stylish serving dish and generously pour the savory sauce over it. Garnish with fresh coriander sprigs and present alongside beans and the flavorful rice mixture; for an added kick, sprinkle with chili before serving.
