Apple and bell pepper marinated pork chops pan-fried to perfection, topped with gravy. Cozy harvest flavors to warm you up on a chilly night.
Ingredients:
  • 1.5 cups apple cider
  • 3 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh rosemary
  • salt and ground black pepper to taste
  • 4 (1 1/2 inches thick) pork chops
  • 1 large apple - peeled, cored, and cubed
  • 1 medium green bell pepper, sliced
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 0.25 cup all-purpose flour
  • 0.25 cup milk
Instructions:
  • Combine apple cider, oil, Dijon mustard, vinegar, rosemary, paprika, salt, and pepper in a bowl. Remove excess fat from pork chops and marinate in the mixture. Chill for 30 minutes.
  • Take the pork chops out of the marinade, keeping the marinade aside for later use.
  • Preheat a nonstick pan over medium-high heat. Sear pork chops until golden brown on each side, approximately 5 minutes per side.
  • Marinate apple, bell peppers, and onion in the reserved marinade while the pork chops cook for 10 minutes.
  • Sear pork chops with marinated apple until golden, 3 to 5 minutes. Add remaining marinade, peppers, and onion to the pan, simmer uncovered for 20 minutes. Transfer pork chops, apples, and peppers to a serving dish.
  • Combine the flour and milk with the pan juices, simmer until thickened for 2 to 3 minutes, then generously pour the gravy over the pork chops.
