Homemade Polish perogies filled with creamy potato and cheese filling, easily customizable.
Ingredients:
  • 4.5 cups all-purpose flour
  • 2 teaspoons salt
  • 2 cups sour cream
  • 1 egg yolk
  • 2 tablespoons butter, melted
  • 2 tablespoons vegetable oil
  • 8 baking potatoes, peeled and cubed
  • 1 cup shredded Cheddar cheese
  • 2 tablespoons processed cheese sauce
  • 1 pinch onion salt, or to taste
  • salt and pepper to taste
Instructions:
  • Prepare all your wonderful ingredients.
  • Combine flour and salt in a large bowl. In a separate bowl, whisk together sour cream, eggs, egg yolk, butter, and oil. Mix wet ingredients into the flour until a cohesive dough forms. Cover the bowl with a towel and let it rest for 15 to 20 minutes.
  • To prepare the filling, cook the potatoes in a pot of boiling water until tender, for about 15 minutes.
  • After draining, mash the hot potatoes with shredded cheese and cheese sauce, then season with onion salt, salt, and pepper. Allow to cool.
  • Divide the pierogi dough into two portions. Roll out each portion on a lightly floured surface until it's thin enough to work with, about 1/8- to 1/4-inch thick. Use a cookie cutter, pierogi cutter, or glass to cut the dough into circles that are 3- to 4-inches in diameter.
  • Prepare the perogies by moistening the edges of the circles with water and adding filling to the center.
  • Fold the circles in half to create half-circles, then firmly press the edges together with your fingers or use a fork for a decorative finish.
  • Arrange the perogies on a baking sheet and freeze until solid. Then, transfer them to freezer-safe bags or containers for storage.
  • For cooking the perogies, bring a generously salted large pot of water to a gentle boil. Drop the perogies in batches and cook until they rise to the surface, approximately 5 minutes. Be careful not to overcook to avoid sogginess. Use a slotted spoon to remove them.
