Whip up a delightful batch of pumpkin oatmeal cookies loaded with delicious chocolate chips that will brighten any day!
Ingredients:
  • 3 cups white sugar
  • 2 sticks unsalted butter, at room temperature
  • 2 cups pumpkin puree
  • 2 teaspoons vanilla extract
  • 2 cups quick-cooking oats
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 cups semisweet chocolate chips
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare baking sheets by lining them with parchment paper.
  • In a large mixing bowl, cream together the sugar and butter using an electric mixer until smooth. Mix in the pumpkin, eggs, and vanilla extract.
  • Combine the flour, oats, baking powder, baking soda, cinnamon, and salt in a separate bowl.
  • Combine the dry ingredients with the pumpkin mixture until evenly mixed. Gently fold in chocolate chips. Using a scoop, place dollops of cookie dough onto the prepared baking sheets.
  • Bake in the preheated oven for about 12 minutes, or until the edges are firm and the bottoms are golden brown. Repeat with the remaining cookie dough.
