Grandma's Waffle Cookies (Pizzelles)

Make Grandma's favorite thin anise-flavored waffle cookies by crisping up sugar cookie dough in a pizzelle iron.
Ingredients:
  • 6 eggs
  • 2.5 cups white sugar
  • 0.5 cup vegetable oil
  • 0.5 cup butter, melted and cooled
  • 1 teaspoon anise oil, or more to taste
  • 5 cups all-purpose flour, or as needed
  • 3 teaspoons baking powder
Instructions:
  • In the stand mixer bowl, blend together eggs, sugar, vegetable oil, butter, and anise oil with a paddle attachment until creamy. Add 1 cup of flour, baking powder, and salt; mix until combined. Gradually incorporate the remaining flour, 1 cup at a time, on low speed until the batter is thick like pancake batter.
  • Preheat the pizzelle cooking iron as directed. Spoon a teaspoon of batter onto each plate, then close the lid. Cook until steam dissipates, about 10 to 20 seconds. Repeat with the rest of the batter.
