Granny's Rhubarb Cake

Delight in a luscious rhubarb cake with a perfect texture, enhanced by sour cream.
Ingredients:
  • 4 cups diced rhubarb
  • 1.5 cups brown sugar
  • 1 cup sour cream
  • 0.5 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon white sugar, or to taste
  • 1 pinch ground nutmeg, or to taste
Instructions:
  • Preheat oven to 350°F (175°C).
  • Evenly layer rhubarb at the base of the cake pan, generously sprinkle 1/4 cup of white sugar on top.
  • Using an electric mixer, blend brown sugar, sour cream, butter, egg, and vanilla extract until creamy. Add flour and baking soda; mix until just combined. Pour batter over rhubarb and sprinkle with 1 tablespoon of white sugar and nutmeg.
  • Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center of the cake comes out clean.
