Elevate any gathering with a nostalgic strawberry cake topped with luscious cream cheese frosting featuring a secret ingredient.
Ingredients:
  • 1 (16 ounce) package frozen unsweetened strawberries, thawed
  • 1 (15.25 ounce) package white cake mix
  • 1 (6 ounce) package strawberry-flavored gelatin mix
  • 4 large eggs
  • 0.5 cup vegetable oil
  • 0.25 cup water
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 4.25 cups powdered sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and grease two 9-inch round pans.
  • Crush defrosted strawberries in a bowl, setting aside 1/4 cup for the frosting.
  • In a bowl, blend white cake mix and gelatin. Stir in strawberries, eggs, oil, and water until fully incorporated. Distribute batter evenly among the cake pans.
  • Bake in the preheated oven until each layer passes the toothpick test, for about 20 to 25 minutes. Cool on a wire rack for 5 minutes, then gently loosen the edges with a knife. Carefully invert onto a serving plate or cooling rack and let cool for about 30 minutes.
  • In a bowl, combine cream cheese and butter until creamy. Add reserved strawberries and vanilla extract, then mix well. Gradually incorporate powdered sugar until fully blended.
  • Layer the cake with frosting, then generously spread the remaining frosting over the top and sides.
