Granny's Strawberry Preserves-Filled Cookies

Spiced cookies with strawberry filling - a nostalgic Christmas treat.
Ingredients:
  • 1 cup shortening
  • 0.25 cup milk
  • 1 teaspoon vinegar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 6 tablespoons strawberry preserves, or as needed
Instructions:
  • Cream together shortening, white sugar, and brown sugar in a bowl with an electric mixer until smooth and creamy.
  • Combine milk and vinegar, allowing it to sit for 5 minutes until it transforms into 'sour milk'. Then, incorporate the sour milk, eggs, and vanilla extract into the shortening mixture, stirring well.
  • Combine flour, baking powder, baking soda, salt, and nutmeg in a large bowl. Incorporate flour mixture into shortening mixture. Chill in the refrigerator for at least 2 hours or overnight.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • On a floured surface, roll out the dough to 1/8-inch thickness. Use a 2-inch cookie cutter to cut out rounds. Place 1 teaspoon of preserves onto half of the rounds, then top with the remaining rounds. Press the edges together lightly using a fork. Make criss-cross slits on the top of each cookie with a knife. Place cookies on an ungreased baking sheet.
  • Bake in the preheated oven until cookies are golden brown, for about 13 to 15 minutes.
