Baked squash topped with crunchy organic granola - a perfect blend of sweetness and crunch.
Ingredients:
  • 2 acorn squash
  • 1/4 cup butter, melted
  • 1 tablespoon chopped fresh rosemary leaves
  • 1/2 cup Cascadian Farm® organic French vanilla almond granola
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions:
  • Preheat oven to 375°F and generously coat a 3-quart casserole dish with cooking spray.
  • Halve the squash, remove the seeds, then slice into 1/2-inch-thick pieces. Layer the slices in a casserole dish, slightly overlapping each other.
  • Combine melted butter with fragrant rosemary in a small bowl. In a separate bowl, blend granola with 1 tablespoon of the butter mixture. Brush squash slices with the rest of the butter mixture, then generously season with parsley, salt, pepper, and the granola mixture.
  • Cover and bake the squash for 30 to 40 minutes until tender when pierced with a fork. Then uncover and bake for an additional 5 to 10 minutes until lightly browned.
