Indulge in this tasty grape and cinnamon slice topped with a dollop of creamy vanilla yogurt.
Ingredients:
  • 540.00g grape
  • 110g caster sugar
  • 21.00 gm lemon juice
  • 2.50 gm ground cinnamon
  • 40g butter, melted
  • 60ml buttermilk
  • 1 Free Range Egg, lightly whisked
  • 225g self-raising flour
  • Melted butter, extra, to brush
  • 5.00 gm caster sugar, extra
  • Coles Vanilla Flavoured Yoghurt, to serve
  • Coles Orange Fruit Drink, to serve
Instructions:
  • Preheat your oven to 180C and prepare an 18cm x 27cm slice pan by greasing and lining it with baking paper.
  • Combine grapes, half of the sugar, cornflour, lemon juice, and cinnamon in a medium bowl, stirring until the grapes are well coated in the sugar mixture.
  • In a large bowl, thoroughly mix together the butter, buttermilk, egg, and remaining sugar. Then add the flour and stir until a soft dough comes together.
  • Divide the dough in half. Roll out one portion on a piece of baking paper into a 21cm x 30cm rectangle. Press the dough into the base and halfway up the sides of the prepared pan.
  • Spread the grape mixture evenly over the slice base in the pan. Roll out the remaining dough on a sheet of baking paper into a 19cm x 28cm rectangle. Cut out circles using a 1cm pastry cutter and remove excess dough. Gently place the dough rectangle over the grape mixture in the pan, ensuring the edges are tucked in. Brush with more melted butter and sprinkle with extra sugar before baking.
  • Bake for 30 minutes or until beautifully golden and puffed. Allow to cool in the pan, then slice into pieces. Enjoy with a dollop of creamy yogurt and a refreshing orange beverage.
