Delicious Cinnamon Sugarloaf with Grape Nuts® and maple sugar topping, perfect for breakfast or tea time.
Ingredients:
  • 2 tablespoons ground cinnamon
  • 1 cup wheat and barley nugget cereal (such as Grape-Nuts®)
  • 0.75 cup light whipping cream
  • 3 eggs, beaten
  • 1 cup white sugar
  • 1 tablespoon maple sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x5x3-inch loaf pan.
  • In a bowl, whisk together flour, cinnamon, baking powder, and baking soda. In a separate bowl, mix nugget cereal with light cream. Beat eggs until light and frothy in another bowl.
  • Combine the cereal mixture, white sugar, and eggs in a large bowl. Mix in the flour mixture until a batter forms. Transfer the batter into a loaf pan and sprinkle maple sugar on top.
  • Bake until a toothpick inserted into the center comes out clean, about 40 minutes. Gently loosen the loaf by running a knife along the pan's sides. Flip the pan over onto a wire rack to release the loaf. Let it cool completely.
