Gravlax, apple & kohlrabi salad

Scandinavian-style preserved salmon elevates this gourmet salad with a tangy kick.
Ingredients:
  • 400g kohlrabi
  • 2 baby bulbs fennel, trimmed, halved, thinly sliced
  • 1 jonathan or gala apple, halved, cored, thinly sliced
  • 4 red radishes, trimmed, cut into julienne (matchsticks)
  • 1000.00 ml watercress sprigs
  • 500g gravlax (see related recipe), thinly sliced
  • 1 egg yolk
  • 40.00 ml white wine vinegar
  • 23.40 gm Dijon mustard
  • 160ml (2/3 cup) olive oil
Instructions:
  • In a bowl, combine egg yolk, vinegar, and mustard. While whisking continuously, slowly drizzle in oil until the mixture is emulsified. Season with a touch of salt and freshly ground black pepper. Yield: 250ml (1 cup) of delicious mustard dressing.
  • In a large bowl, mix together kohlrabi, fennel, apple, radishes, watercress, and gravlax until evenly combined. Drizzle dressing over the salad and toss to coat.
  • Plate the salad and enjoy while it's fresh.
