Gravlax salsa with caraway wafers

Ingredients:
  • 250g gravlax (see related recipe), coarsely chopped
  • 1 ripe avocado, halved, stone removed, peeled, coarsely chopped
  • 1/2 red onion, finely chopped
  • 40.00 ml finely chopped fresh chives
  • Salt & freshly ground black pepper
  • Olive oil, to grease
  • 225g (1 1/2 cups) plain flour
  • 20.00 ml caraway seeds
  • 125ml (1/2 cup) lukewarm water
  • Plain flour, to dust
  • 9.20 gm olive oil, extra
Instructions:
  • Preheat your oven to 200°C. Using olive oil, lightly grease 2 baking trays. In a large bowl, mix together flour and caraway seeds, then season with salt and pepper.
  • Gradually mix water into the flour using a round-bladed knife until just combined. Transfer onto a lightly floured surface and knead until smooth.
  • Divide the dough into 4 equal portions, then shape each into a ball using your hands. Roll out each ball into a 25cm-diameter disc that is 1mm thick.
  • Place 2 dough discs on each prepared tray and lightly brush with extra olive oil. Bake in the oven for 5 minutes. Remove, flip wafers using an egg lifter, then return to bake for another 5 minutes until golden patches appear. Transfer to a wire rack to cool completely.
  • Mix together the gravlax, avocado, onion, chives, and lime juice in a bowl. Season with salt and pepper to taste.
  • Gently crush the wafers into big chunks and enjoy with the flavorful gravlax salsa.
